无锡油面筋的生产始于清乾隆时代（18世纪中叶），至今已有230多年历史。当初的制法是将筛过的麸皮加盐水用人力踏成生麸（又称面筋），再将生麸捏成块状，投入沸油锅内煎炸，成为球形中空的油面筋。清水油面筋的称呼在清代末年（19世纪中期）出现，第一家挂出“清水油面筋”招牌的是笆斗弄的马成茂面筋店。
无锡油面筋色泽金黄，表面光滑，味香性脆，吃起来鲜美可口，含有很高的维生素与蛋白质，如塞进肉瓤烧煮，则别具风味。 |
